  • - Hey dudes. I'm Hilah and today on

  • "Hilah Cooking" I am making

  • Potato Chip Nachos which is every bit

  • as ridiculous and delicious as it sounds.

  • (light electronic music)

  • Alright, so yesterday, I made my slow cooker

  • Mexican shredded beef which is kind of like

  • a Chipotle Barbacoa knockoff.

  • That recipe is on my website.

  • But the great thing about Potato Chip Nachos

  • is that you can use any kind of leftover

  • meat that you have, like, if you have a leftover

  • brisket or barbeque or roasted chicken, anything like that.

  • I came up with this idea a long time ago

  • when I was drunk and it's really good

  • drunk people food, so...

  • I've got my kettle chips here.

  • You want to make sure you use some good,

  • sturdy kettle chips and we're gonna

  • distribute our meat generously and evenly.

  • And I've warmed this up a little bit

  • so it's not like, refrigerator cold at all.

  • And another name for these is "old white lady nachos"

  • 'cause it totally reminds me of like, the kind of

  • Mexican food that my grandma would have made

  • in the 60's or whatever.

  • She was a great old white lady and I miss her.

  • And she would have loved this recipe.

  • The second part of Potato Chip Nachos

  • is a bunch of cheese.

  • I'm using some Monterey Jack

  • and just get it over everything.

  • Little layer of cheese to kinda hold all the meat on.

  • And Potato Chip Nachos do not have any beans

  • on them because beans are way too healthy

  • for Potato Chip Nachos.

  • And then, this is the piece de resistance for this.

  • This is some spicy bread and butter pickles.

  • So, they're sweet and spicy.

  • Instead of using pickled jalapenos,

  • we're using bread and butter pickles

  • with a little bit of heat because

  • every old lady loves bread and butter pickles.

  • Makin' Potato Chip Nachos

  • And then another little layer of cheese

  • to keep all of those pickle slices on.

  • Stick it in the broiler, just until

  • the cheese is melty and then we'll

  • finish it up with our garnish.

  • (light electronic music)

  • Voila!

  • These are done.

  • If you want a more traditional nachos,

  • I did one of those, too.

  • Nachos Supreme with an avocado cream sauce.

  • Really good, but these are just like,

  • I don't know, there's something great about 'em.

  • So, we're gonna garnish these.

  • Whoa, yes, yes, yes.

  • Garnish with a little sour cream.

  • Dairy on top of dairy,

  • and some vegetables.

  • Little iceberg lettuce, okay.

  • Hee hee hee! Ha ha!

  • (crunches)

  • Mmmmm!

  • Mmmmm!

  • Oh, man, that's so good.

  • It's so gluttonous.

  • It's so incredibly ridiculous and I love it!
