Water towns like this used to be more common in this part of China. Many of them have been demolished to make way for new buildings. But Fengjian has been preserved as a tourist destination, with its canals, centuries-old bridges, and impeccable street food. And here are five dishes you don't want to miss. This dish, steamed in a giant box, is one of the main reasons why locals visit Fengjian. Visit on a weekend, and you can see the shop steam a whole pig. Fish is a staple ingredient in this part of China, and this shop owner says every family here knows how to make fish cakes. They are made from mud carp, a common species in southern China. This cold dish is another example of how locals make the most out of mud carp. This dessert is a signature dish in this region, and it doesn't take long to make.
