We can't stop thinking about reindeer, so I thought I'd do a reindeer omelet.
Don't get upset because it's a sort of a spicy sausage made from reindeer meat, but it's done with most amazing brown cheese.
Now this'd is a traditional cheese here.
It's delicious.
Honestly.
It's so rich and dense and heavy.
But it's called brown because it is literally a block of brown cheese.
On what it is is a protein leftover from making the white cheddar cheese caramelized and reduced down.
So it's incredibly creamy.
That's so delicious.
So I use some of the reindeer sausage.
Okay, now the nice thing about this particular moment, it could be a good breakfast, lunch or dinner slice of reindeer.
Nice and take a bit of butter.
Okay, go back to the path now.
Reindeer meat.
There's hardly any fat in there, so you get the sausage in pretty quickly.
Get that really nice and hosting from there.
Life season?
No, the Sami derision using lots of rain.

Because they never want you to miss out on that flavor from the reindeer.
So just so only mushrooms.
I'm just gonna slice face them in.
So the sausage.
The secret here is to make sure I get some really nice color on those mushrooms.
Take a water out.
Really important.
Now find at all.
Tell the gas up for the love in there on.
I'm gonna start the omelet until that reindeer sausage and those mushrooms A coach now fuck you.

Now it's almost like a spicy Mary Gags and Caramelizes gets a beautiful color on there.
And then on the side here I wasn't useful roasted tomatoes, and they're just bean.
So roasted.
Almost blessed us when they look absolutely the usual.
I'm sort of roasting them in the embers.
So So good touch.
So from there now, from the get my eggs.
Well, mhm.
That's the nice thing about being here, steeped in this tradition.

Yeah, with love care.
More importantly, nobody messes with tradition.
So to make a four hey, Goblet says lightly beat that.
You know, through that get a little shavings off cheese running through that omelet.
So when that nice sort of caramelized around cheese flavor that's gonna help, sort of give it a little bit more richness ons because it's quite salty.
You'll give a wonderful flavor to the omelet.
Trust me, this is not your average on it.
This is a reindeer brown cheese.

Beautiful waters come from the mushroom on the sausages.

Okay, now, from the back onto the heat, we're gonna mix that way.
Start to set it.
That's really important way.
Don't season it until we're literally about to finish cooking in 30 seconds on 30 seconds off.
And all I'm doing is making sure that cheese is melting evenly.
But I'm gonna keep the color of this on there.
Nice and vibrant.
But what That cheese is doing it on there.
Sort of giving it a nice sort of light brown tenge.
Almost like a beautiful.
He likes golden orange sunset.
Now, from the end of the season, lively sees it.
Call that in no e color that she was working its magic.
The eggs are cooking nicely.
Then from there back already.
Come out crisp.
I'm delicious.
Okay, that mushrooms.

On top of that, before I start calling you beautiful.
Now, as it sets underneath, that's my base.
I've got that beautiful, caramelized reindeer sausage.
The mushrooms are nicely colored.
That cheese is gonna send me melt.
But in the center is gonna be nice and sort of moist in a way that it's a sort of a creamy delicious on it.
Now for the exciting part.
We're gonna fold it now.
Tip it out.
Sorry.
No, Tap it a few times.
That stops it from sticking.
Get your spatula in on.
Just literally.
Start folding that over nicely, boy.
Are you kidding me?

Oh!

Touch yourself on top.
