Subtitles section Play video Print subtitles Oh! Hello. Today I'm making one of the simplest recipes I know. Spotted Dick or Plum Bolster. It's ideal for the Service Hall and very popular for the nursery and at schools. Well, it is very cheap to make. For this recipe you will need: Flour. Suet. Currants. Sugar. Cinnamon. Egg. And milk. First I'm going to mix the flour, the currants, the sugar and the suet together. Everybody loves this pudding and so it has lots of different names. Plum Bolster, well plum because it has dried fruit in it, and bolster as I suppose it looks like a bolster on your bed. Current Pudding and Spotted Dick which really means spotted dough. Now I'm going to add a little cinnamon. And i'm going to whisk an egg into half of the milk. The dough doesn't want to be too sticky so I shall add the rest of the milk a little at a time. Now that the dough is firm but not too sticky I'm just going to knead it a little more. And it's ready to be wrapped in a cloth. My cloth is already damp so I just need to sprinkle it with a little flour. And make a bolster shape with the dough. You must make sure that you wrap it up really tightly. And now it's ready for boiling. Now that's been at a rolling boil for just over two hours so it should be ready. Now I need to unwrap it. For the Servants Hall, I'm going to serve it with a very thick custard. There we are. Spotted dick.
