In stores, cinnamon is typically labeled as Saigon, regular(aka cinnamon without specification), or Ceylon cinnamon. Each of them came from different regions. "Ceylon cinnamon" or Cinnamomum verum, is native to Sri Lanka, and often called "true cinnamon". However, most globally traded cinnamons are actually "cassia" cinnamon from other species, namely, Cinnamomum burmanni (aka Indonesian cinnamon), Cinnamomum cassia (aka Chinese cinnamon), and Cinnamomum loureiroi (aka Saigon or Vietnamese cinnamon). As of 2018, Indonesia and China dominated global cinnamon production, contributing 40% and 30% respectively. So if your cinnamon does not specify as either Ceylon or Saigon, they are likely coming from Indonesia or China.
