Hi guys, it's Angel.
Today I'm going to show you how to make a ginger scallion
beef stir fry.
Now, similar to my last video on a five minute egg flower
soup, this recipe is a great weeknight recipe
as well because you can prepare, marinate, and cook it
in under 30 minutes or less.
So with that, let's get started.
First, let's start with the beef.
We'll need about half a pound of beef sirloin or top round.
Now, when you're out grocery shopping,
try look for the pre-cut thin slices of meat
that have been already cut by your meat department.
Then all you need to do is just cut them into thin strips.
This makes everything easier for you when it comes time to prep.
Next, for the marinade we'll need
two tablespoons of low sodium soy sauce,
one teaspoon of sugar, two teaspoons of cornstarch,
one tablespoon of rice wine, two teaspoons of freshly
grated ginger, and finally a generous amount fresh ground
pepper.
Mix everything really well, then let that marinate
for 15 to 20 minutes.
While that's marinating, let's go ahead
and prep the scallions.
I've got five to six stalks of scallions,
and feel free to use more if you like.
I feel like scallions really make this dish,
so this is one of those times where less is not more.
We'll want to start by cutting three inch sections.
And if you need to, slice the white portions
of the scallions in half so it cooks evenly
with the top portions.
Now let's cook.
Bring a wok or non-stick pan to medium high heat
and add a generous amount of oil to your pan and a tablespoon
of oil to your marinade, which will help coat
the beef prior to cooking.
Next, cook the meat and stir fry until the beef has just
browned, and is about halfway cooked.
Then add in your scallions and continue
to stir fry for another minute or two,
taking care not to overcook the beef.
Finally, before serving add a bit of salt to taste.
So that's how you make my ginger scallion beef stir fry.
Now, since it's lunch time, I am going to go ahead and try some
because I am super hungry.
And do the taste test.
So when you eat the beef, make sure that you
get at least a scallion or two.
Mmmmm.
I love how tender the beef was, and the flavors
of the ginger and the scallions just taste perfect together.
