Today I'm teaming up with some really great food channels on Youtube and we are bringing you a mother's day brunch playlist. And I want to dedicate this video to my momma! She is one of my biggest cooking inspirations, and mom, I love you and I miss you. So these are some mini bacon egg toast cups, and what's really great about these is you assemble as many as you want, throw them in the oven, and they come out ready to serve at the exact same time. So I've got some bacon that's almost done crisping up in my skillet, what I'm going to do next is take a little bit of melted butter and grease the bottom and sides of two of these muffin wells. And then I've got a piece of toast that just came out of the toaster, and a little cutter that's the exact same size as my muffin hole. So I'm going to cut out two of these little toast circles, and you just stick it right in the bottom. Next I'm going to take my crispy bacon straight hot out of the pan. You see how this is still flexible and wiggly? You want to take it straight out of the pan so it's still pliable. Just wrap it around the sides of the muffin tin, looks good...two extra pieces for me. Always make extra bacon. And then I've got some white cheddar, some sharp cheddar cheese I'm going to drop into the bottom of each of these muffins tins. But you could pretty much do whatever cheese you want here. Then I'm going to crack an egg right into each of these, and before it heads into the oven, a little sprinkle of salt, and some freshly cracked black pepper. Alright, so how quickly did that come together? I'm going to throw these into a 400 degree oven for about 12 to 15 minutes. I like the egg yolk a little bit runny, but if you want it to be fully cooked, then do it for the full fifteen. Once your mini egg bacon toast cups are finished baking, you just run a knife around the edges, pick it up with a fork and plate it. I usually like to garnish it with a little bit of chopped scallions, you could do some chopped chives, I've heard of people doing salsa, sauteed mushrooms...you can definitely get creative here and do whatever topping you want to.
