Today I don't cook, just I mix. First, you need English cucumber. Seedless cucumber is the best, but English cucumber is not available in your country, any type of cucumber without seed. If you have seeds, scrape out with a spoon, and then just a seeds are not pretty, eh? And then, only a flesh you can use. This is around 12 ounce cucumber. I just take it out from my refrigerator and wash this. And very clean and cold right now. This recipe, just before serving, you gotta make this. So easy. Let's start. My mixing bowl is in the fridge right now. I'll bring it. This is cold. Let's tip this guy and cut thinly, diagonally, like this. So this inch, it's going the be around three inches from here and here. (chopping) to make nice matchsticks, thin matchstick, from the beginning you should cut this thinly (fast chopping) Put this in my mixing bowl. One garlic clove. Green onion, one green onion. (chopping) All minced garlic and green onion. And let's add. Next, I will use this red chili pepper. It's very hot, spicy. So you should not use whole one chili. And this is optional. So if you like to make a non spicy version, skip this. But I will use just a little bit. gives a little spicy kick and good flavor. So far, too easy, isn't it? And then, let's season! I'm going to add one and half teaspoons salt, one and half. And then, soy sauce, one teaspoon. And sugar, two teaspoons. We made a sweet and salty. We need sour stuff. This a white vinegar, four teaspoons. One tablespoon plus one teaspoon, right? And then, mix. Mix well until sugar, salt is well combined. Later, I'm going to garnish on top, sesame seeds. This is toasted, home toasted sesame seeds. And also, the small cherry tomatoes are really pretty, so I'm going to also use cherry tomato on top. Now, let's cut it. (chopping) Sesame seeds, these toasted sesame seeds, I'm going to grind these. It gives really nutty flavor, really tasty. If you don't have like mortar and pestle, your two finger, index and thumb, and using just crush like this. You know, make around one tablespoon amount like this. Easily, you can do. This is our serving bowl? And this is cold water. And then pour one cup water. Cold water. Slightly mix this. This is ice. We need ice. Ice cube, seven to eight, around one cup amount. Then, I'm going to just crush this, like this. Sesame seeds. Today, we made Oi-naengguk, it's a cold cucumber soup. Really, really, really cold. You have to serve right now, when it's really cold. And I made gimbap because I felt like eating some gimbap, you know, today, so I made this. It goes well with Oi-naengguk. So, gimbap. Something like a ladle or any large spoon, for the people individual, you can share together. So like this. Mmm! (slurp) Mmm! Cold, very refreshing and sweet, sour, little salty. This a perfect when you eat with rice or gimbap like this. When I traveled Europe, I was crazy about gazpacho soup. You guys, if you are Europeans, probably you know that. It reminded me of Oi-naengguk, even though usually Oi-naengguk, we don't add tomatoes. But ever since I came back from travel and then I was thinking about gazpacho soup, is that also, I started adding tomato. I just always realized when I travel, so many different kinds of food from different cultures, but similar kind of way of making it. So you probably, all of you guys know this. Today, we made Oi-naengguk, cold cucumber soup. Enjoy my recipe. See you next time. Bye! (upbeat music)
