When my sister cooks in Africa she can't do what I just did. She can't go to the fridge and just pull out a pound of ground beef, heat up the skillet and get cooking on tacos. When I first got to her village the villagers had pooled their money together and they gave me an entire goat. I didn't know what to do with a goat. I mean, I don't know, if somebody gave you a knife, a pot, and a fire and said cook this goat would you know what to do? I didn't. So let me show you how we did it. But we also used this goat as a way to change somebody's life, believe it or not. So, I'll show you that at the end of the video. Let's cook goat. You're getting Smarter Every Day. OK, we're going to show you how to kill a goat, and butcher it, to eat it. This is Billy. (male) Hold this. [foreign dialogue] [distressed goat sound] (Destin) Where do you skin? I'll help you. (male) You know how to skin? (Destin) A little bit. I'm about to learn. Oh roast it first roast the hair off of it? -yes (male) You want it skinned? (Destin) No, you teach me what the culture is and that's what we'll do. -Well there are two types, he like to skin it or to eat it but to roast it will be very fast. (Destin) OK let's roast it. (Destin) So big wood. So this gets the hair off quickly? (female) Obviously. It's on fire. (Destin) [sniffs] It's kinda, kinda hard to describe burnt goat smell. Wooo! [laugh] (male) Watching? (Destin) ohh wow. Africana soap. (Destin) Africana soap ♪ Washing the goat. ♪ This is everyday, this ain't nothing. This is Africa. Poor Billy I kind of liked him. OK so cut around the joint -yes Pull the legs off, the hairy parts. Oh that's a big piece. That's a very good piece isn't it. -Yeah -Is very sweet. You're trying not to.. not to cut the stomach, yes? Because if you cut the stomach the bowels will come out. OK that's the hip. Oh the butt. aah the bowels. Ooh he had a full stomach. Oh thats the gall bladder? Cut the gall bladder off. Oh it's poison. The inside of the stomach has hexagons on it. The large intestine? (female) You're happy. (Destin) Wow! [laugh] This is why there's always a bunch of little bitty pieces of bone. Nothing fire can't fix. Boil the goat and you're done. Eat up. So the honeycomb that you saw inside Billy's stomach is something that's common to all ruminants. Ruminants are cows, goats, sheep, anything that chews it's cud. And you've heard that cows have four stomachs. Not true. Cows have one stomach but it has four compartments. These compartments are the reticulum, the rumen, the omasum and the abomasum. The reticulum is where the honeycomb is, and the rumen is the big compartment that the cud comes back up from and goes back down. It's where a lot of the digestion happens. Anyway, so we figured out a way to make this gift of a goat to me from the villagers, they were thinking about my belly. We figured out a way to stretch this to a thousand fold. So I gave the sounds of this event to Gordon. Gordon makes all the music for Smarter Every Day. He entered it into a contest at the Vancouver Film School and he is now a finalist. The contest is to create a sound that's never been heard before. He chose the birth of an imaginary animal, and he knocked it out of the park to be honest, it's like nightmare fuel. It's an un-cuddly animal in this case. Anyway, long story short, he needs this scholarship. Go vote.
