This looks really fancy. Urgh! This is Thailand's first fine dining restaurant with a menu based on bugs. It is run by one of the country's top chefs, Mai Tantragarn... Hello! Hello! ..known as Mike. I'm Nadiya. Mike. Hello, Mike. Mike is passionate about people eating insects, so he's prepared a tempting selection of the farmed critters for me. Bamboo caterpillar. Silkworm. I mean, I've seen them. To you, insects are not scary. Yeah. So you're bringing it to us early? Yes. This is a menu. Although I'm hoping the end of the world isn't coming any time soon, I suppose eating bugs is one way of getting protein to the growing number of people on the planet, without destroying it. I mean, it's still... Oh. It's an insect. He makes that look so easy! OK, I'm going to do it. Yeah, it's not that bad. That's nice. Mike's had diners from all over the world, and I'm keen to try some of the dishes that have been a hit here... ..kicking off with cricket nachos. You're not being shy. It is a lot of crickets. Nobody eats nachos with a fork. Oh, yeah, I suppose. But I'm common as muck. The crickets make it really meaty, and there's a nuttiness to it. Yeah. Have I got cricket in my teeth? Mike's mission is to get us all eating insects, which sometimes means adding them to familiar foods, so even a fish dish on his menu isn't spared the insect treatment. Does that mean ant babies? OK, that's good. OK. Oh, yeah. Lots of textures, all just works really well. There's nothing in my mouth that says, "Oh, that's ant larvae." That is really delicious. In fact, I'm getting so into eating insects, I've asked Mike to think of a way of using them in my favourite snack, crisps. I buy them from a shop and eat them out of a packet. We're starting with crickets and water. Right. I mean, it's not looking that appetising right now. Mm-hm, mm-hm. Yum. Then we can turn it into a dough by adding potato flour and corn-starch. Oh, my goodness, I can see bits of cricket. Look at that. There'a bit a wing, a bit of foot. Oh, wow. OK, that looks a little bit more like a chip now. Yes. One handful? Yeah. It's there. Whoa. Oh! Oh, you, clever, clever man. So, good for me and they're good for the world. Yes. You have one convert. I'm converted. Last night, if you'd told me that I was going to be eating insects tomorrow, I would have said, "No, I'm not." But, I have to say, Doomsday Mike has convinced me they are not that bad.
