A tuber is a thickened underground part of a plant, like the potato, which stores nutrients. Potatoes are grown for their starchy tubers, which we commonly eat boiled, mashed, or fried. Herbs, on the other hand, are typically used for their leaves, stems, or flowers and are valued for their flavor, aroma, or medicinal properties. Potatoes don't fit this category because they're not used for these purposes and have a very different growth structure. They're harvested primarily for their underground parts, which are very different from the leafy or aromatic plants we categorize as herbs. So, potatoes are definitely vegetables, not herbs, even though they can be flavored with herbs when cooking. Interesting, thank you. I think I have the overall understanding of what herbs are.
