"Sho-yu" is "sho," but "se," ...a long time ago we called shoyu "se-yu." So it's really "shoyu." So this is soy sauce. And "So" is "miso." Sa-shi-su-se-so. This is basic Japanese seasoning. Northern side miso around Nagano... This is "koji," miso called "kome-koji" It's a sweet miso. This is good for cucumber dip. I've tried that. The last one is mugi-miso. It's from the Kyushu area.
