This is Banh Xeo, it's kind of like a Vietnamese crepe, it's very crispy.
How you make it, is that you
have egg batter with a little bit of flour and the shrimp and a little bit of pork
but of course you can customize it your own way
that's the beauty of Banh Xeo. And what you do..
Is that you cut out a piece of the Banh Xeo, if you want extra credit
have a little bit of green with it too. Like a taco just dip it in like this
just go right in.

I have to catch my own lunch which will make me greatly appreciate what i'm
going to eat and apparently you have to have great patience for catching shrimp
it's not as easy as one would think

Here are the noodles
it's really fresh it's actually really simple
they hand make it and
they just poured the duck fat on top of it
partially dry but apparently this is the style going in
cheers mates! By far one of the best meals I've had yet
and guess how much it cost per person, 2 dollars!

they are beautiful. I feel kind of bad actually taking them that you know that
when I have them I'll be grateful for them.
I'm here in Saigon and i'm visiting this market it's called Cho Cu which means
old market and this is where a lot of people here they buy their food
it's kind of like a farmers market but it's every day and this is authentic
vietnamese and you see people here on the mopeds
they just stopped by their favorite stalls and they just grab whatever
they're buying, fruits, vegetable, fish
anything fresh there's something really beautiful when you're buying it
from someone that you know or someone that you know of someone that you know
you have a greater appreciation.
So good so it looks like there's mushrooms in here and mince pork

Vietnamese biscuits from Popeyes so these biscuits apparently they are better than
the ones you get in America because its first look at it it looks gently because
they handmade it
there's honey butter in here and on top of that it's just still fluffy
haha
less than a dollar fifty between this beautiful thing right here
look how they package nuoc mam, they put it in a little baggy like this

the best Banh cuon I had it's incredible

and you know in New York you have to pay an arm and a leg for this. But it is
so simple you just have to get a banana leaf cut it out to the shape of plate
and pop it on.
The tofu is crunchy
the bun is really
soft and fresh but it is really the shrimp paste that gives it that flavor
so this place is what it's called of backpackers district
and it's like a night market
a lot of restaurants a lot of bars people can congregate just have fun
dood
so hard to peel. How do you do it?

even though we were in Saigon and Da Nang
and Hanoi everything that we ate was different we had no overlapping meals
and it was amazing because it made me realize wow there's so much more to
vietnamese food than just Pho and Banh Mi
there's so much more it's so many layers and depth to our food and it made me
really excited to explore more of my country
