For success every time make sure you use the right ingredients. I use the all in on method because that's what I get success with and just beat it enough to keep the ingredients together. Make sure you've lined the tin on the base so that you can get it out and bake it at the right temperature. If you put it in too hot an oven you'll find that it will dome. If you cook it at 160 that's about right and it should take between 20 and 30 minutes. To know when it's done, you'll see that it should be a pale golden-brown, shrinking away from the sides of the tin. And when you put your finger in the middle and press very gently, it should come out again. Turn it out carefully and wait 'til it's cold and then sandwich it together with your favourite jam. And a sprinkling of caster sugar over the top. And then you'll have the perfect Victoria sandwich. [Music]
